1 huge cucumber
2 huge red peppers
1 red onion

250g of good firm feta cheddar
1 little bunch of new parsley leaves
Approx 1 dozen new mint leaves
125ml of additional virgin oil
2 tablespoons of lemon juice
1 clove of garlic squashed
Take the cucumber, strip it first and cut it down the middle, length ways. Take out the seeds and afterward cut into little 3D shapes. Cut the red peppers crosswise over into cuts. Expel every one of the seeds and essence. Finely cut the onion. Cut the feta cheddar into little shapes. When you have done this, place the tomatoes, cucumber, red peppers, onion, olives, feta in an enormous serving of mixed greens bowl. Include a large portion of the parsley and mint leaves. Tenderly combine.
Put the olive oil, lemon squeeze and squashed garlic into a compartment with a cover. Include somewhat salt and pepper to season. Shake until blended altogether.
